The first time I had Ofada stew was in a restaurant at Abuja, I enjoyed it so much, the Iru mixed with Peppers and assorted Meat was just Yummmmm. Another time, I saw #Ayamase on instagram and I wondered what it was so I decided to google it and saw it is Ofada sauce and I was like “Hmm, oh really!”, now I decided to try it out myself. Ofada sauce is spicy, tasty infact it is deliciousness in its entirety which takes you to yummy paradise.
INGREDIENTS FOR OFADA STEW (AYAMASE)
- 9 large green bell Peppers
- 3 large red bell Peppers
- 15-20 red and green scotch bonnets (Atarodo/ Atarugu)
- 1 large Onion
- ½ cooking spoon of Locust Beans (Iru)
- 1 tablespoon of ground Crayfish
- Knorr cubes
- Salt to taste
- 2 cooking spoons of Palm Oil
- 500g Cooked assorted Meat [Shaki, Ponmo, roundabout, liver etc)
- 2 cups of Beef stock
HOW TO PREPARE
- Wash and blend all the Peppers together then set aside
- Add Palm oil in a pot, cover and allow to heat up for about 7- 10 minutes on medium heat (somewhat bleaching the oil, but I didn’t bleach mine too much)
- Add chopped Onion, blended Pepper mix and Locust Bean, allow to cook for 10 minutes
- Now add a bit of Crayfish, assorted Meat, Beef stock , check if seasoning and Salt are in proportion, cover and cook for 7 minutes (the Meat should be cut in small chunks)
- Our Ofada stew is ready
Serve with Ofada Rice, White Rice, Basmati, Yam etc.
