Nigerian fried Rice is a classic dish and a popular Nigerian Rice recipe. A lot of People love it; anytime I say I want to make fried Rice, everybody always wants to eat. Anytime you see any post or video about Nigerian fried Rice, You expect to see a yellowish- green colour  Rice dish; this is because of the use of Turmeric or fried Rice spice used to colour the Rice. It is really beautiful and colourful and filled with vegetables, continue reading to see how I make mine.

My fried rice recipe do not require too much oil, I will need just 1- 2 tablespoons because I use rich chicken stock and we already know that chicken has its natural oil, so putting too much oil is just so unhealthy. You can also use vegetables of choice, I’m using peas, carrots, red bell peppers and sweet corn; you can addgreen pepper, green beans etc if you want to.


  1. 4 cups of Rice
  2.  200g Liver, shrimps, prawns, chicken, gizzard, kidney or Beef (boiled and diced) use any you like
  3. Vegetable oil [2 tablespoons
  4. 2 cups of Beef or Chicken stock
  5. 2 large Onions
  6. 1/4  cup Peas
  7. Sweet Corn {1/4 cup}
  8. Minced Ginger and Garlic
  9. Red bell Pepper(3 medium sized)
  10. 1 tablespoon dried Thyme
  11. 1 tablespoon Curry powder
  12. Fried Rice spice or Turmeric( 2 tablespoons)
  13. Knorr cubes (as required)
  14. Salt to taste


Before You start cooking, wash all the vegetables: dice the Carrots, red bell pepper, and Onions, wash Peas and strain sweet corn liquid.

  • Parboil some Rice in salted water for 5 minutes, strain, rinse with cold water and set aside.You can also wash the rice with salt and water, I do this when I’m using basmati rice because it cooks faster than normal rice so does not really need parboiling
  • In another Pot, add Chicken or Beef stock, water enough to cook the Rice, Turmeric or fried Rice spice for colour, Knorr cubes, curry, thyme and salt to taste. ( chicken stock makes fried rice really tasty, so use it if you can)
  • Bring to a boil, then add in the Rice and cook until soft but not soggy, You do not want to end up with a sticky Rice.


  • In a small pot, allow water to boil then add in the chopped carrots, and peas and boil for 2 minutes; then run under cold water, set aside (this method is called blanching). This makes the colours of the vegetables pop out more
  • Heat up vegetable oil in a pan, add, minced ginger and garlic, sliced Onions and fry till translucent,

  • Now add in all the vegetables [carrot, peas, bell pepper, sweet corn and stir fry for 2 minutes

  • Add the diced liver, chicken, kidney or anything you are using then add Knorr cubes, pinch of salt, curry and thyme and stir

  • Allow to simmer for 2 minutes then turn off the heat
  • If you have a big Pot depending on the quantity of Rice, pour in the cooked rice into the big pot then add the sauce and stir over low heat for 1 minute, but if a big pot isn’t available, fry the Rice and sauce in batches i.e. mix Rice and sauce in little quantity until you finish.

Our delicious Nigerian fried Rice is ready. Serve with Chicken, Beef, Plantain, Fish etc. I love mine with some salad and grilled chicken, yumyum…
