Stir fry is one of the most popular Chinese dishes; it is filled with a lot of goodness like protein and vegetables. This recipe is made with our normal  Indomie noodles you all know, it is fast, easy and very yummy, I decided to give my usually indomie noodles a twist and I thought why not try a stir fry, thankfully I had most ingredients at home. I used chicken in mine, you can use whatever you like; beef, pork, prawn, shrimps, eggs the list is endless. Check out my review on stir fried noodles with pork at a Chinese restaurant . You can also use any noodles you have or like, trust me guys; it’s like making your own Chinese dish at home.

INGREDIENTS

  • 2 packs of Indomie noodles ( 125g and 70g)
  • 200g chicken breast
  • 1 large green bell pepper
  • 1 large red bell pepper
  • 1 large scotch bonnets
  • 1 medium sized onion
  • 1 medium sized spring onion
  • 1 large carrot
  • 1 medium sized tomato
  • 1 seasoning cube
  • 3 tablespoons vegetable oil
  • 1 tablespoon ground pepper
  • 1 tablespoon grated ginger and garlic
  • Salt

PREPARATION

  • Wash and cut the chicken breast into strips
  • Marinate the chicken for 1 hour or more with some of the ginger and garlic, seasoning cube, salt and ground pepper

  • Wash and Cut all the vegetables into desired shapes (I cut some into juliennes while I diced some). Cut the red bell pepper, green bell pepper and scotch bonnet together, carrot, tomato, onion and spring onion separately on their own then set aside

  • Add 2 cups of water in a pot, add 1 teaspoon of vegetable oil and bring to a boil(the oil is so the noodles doesn’t stick together)
  • Add indomie noodles and boil till firm not soggy, this should take take about 8 minutes

  • Strain and rinse the noodles with cold water then set aside
  • Add in vegetable oil in a pan, add the marinated chicken and stir fry on low heat until the chicken is cooked (this should take about 10 minutes)
  • Remove the chicken from the oil and set aside, by now it has released some juices in the oil

  • Throw in onions, ginger and garlic, stir fry for 1 minute
  • Now add in carrots and stir fry for 2 minutes (You can increase the heat a bit here)
  • Add in tomato, spring onions and stir then pour the peppers and mix thoroughly

  • You can now introduce the chicken, then add the parboiled noodles

  • Stir very well, add noodles seasoning and ground pepper
  • Mix and allow on heat for 1 minute

Our yummy and mouth-watering Indomie stir fry noodle with chicken is ready. I enjoyed every scoop, it was amazing; from the colour, aroma and taste.
